Acorn Biscuits

Description

Courtesy of Amy Crowell

These biscuits highlight the slightly bitter taste of acorn meal. If your guests aren’t thrilled about the bitter flavor, offer them butter, honey or wild fruit jam to spread on top.

Ingredients

At a glance
Course/Dish
Biscuits
1 c. acorn flour (click here for directions to make your own)
1 c. all-purpose flour
2 t. baking powder
½ t. baking soda
½ t. salt
4 T. cold butter
¼ c. yogurt
½ c. milk

Methods/steps

Mix flours, baking powder, baking soda and salt together in a bowl. Cut the butter into the flour mixture. Mix the yogurt and milk together in a bowl, then add to the dry ingredients and stir a few strokes until dough forms. Knead the dough five to six times, then roll or press onto a flat surface.
