Black Beans

1 lb. dried black beans
1 small red onion, diced
1 green bell pepper, diced
2 jalapeños, chopped
5 cloves garlic, minced
1 lime, quartered
2 bay leaves
1 T. cumin
1 T. medium chili powder
1 T. dried oregano
1 T. sea salt
1 bunch of cilantro, chopped finely

Methods/steps

Soak the beans for at least 8 hours before cooking. Add the beans to a large pot and cover with water. Bring to a boil, then adjust the heat to medium and cook for about 1½ hours. Add the veggies and garlic to the beans and cook for another 45 minutes on medium-low heat. Add the lime quarters to the beans along with the spices, salt and cilantro and simmer for at least 30 minutes, or until beans are tender. Note: you’ll
probably have to add water throughout the process as the water evaporates.
