Arrange the cleaned mushrooms on a baking dish. Preheat the oven to 350. In a bowl, combine the chorizo, breadcrumbs, cheese, thyme and garlic and mix well. Divide the mixture between the mushrooms, filling the caps. Bake for 15-20 minutes, or until the mushrooms are tender and the sausage mixture is browned and bubbling. Serve hot or room temperature.
