1. Bring water and salt to a boil in a pot. Add cracked wheat, cover with a tight fitting
lid and let sit for 15 minutes until water is absorbed. Cracked wheat should be tender but not mushy. Transfer to a large bowl and toss with lime juice while still warm.
2. Warm olive oil over medium heat in a skillet until shimmering. Add onions and sweat
until soft, about 10 minutes. Add peaches and toss to combine. Remove from heat and
fold in chiles, mint & cilantro.
3. Add peach mix into the cracked wheat and toss to combine. Drizzle with more olive
oil and season with salt & pepper to taste.
