Cucumber Salad

Cucumber and dill make a delicious combination, but in Central Texas, their growing seasons barely overlap. Fortunately, dill freezes beautifully and tastes great when used later.

Cucumbers
2 t. white wine vinegar
2 t. Dijon mustard
½ t. salt
1½ t. sugar
1 T. Texas olive oil
2 T. chopped dill
Lemon thyme, for garnish

Methods/steps

Thinly slice the cucumbers with a mandolin or sharp knife. Whisk the remaining ingredients together. Toss the cucumbers with the dressing and serve with freshly chopped lemon thyme or other herbs from the garden.
