Muddle the Kaffir lime leaf in the mixing tin; the leaf is tough so it's okay to be aggressive. You should smell the aroma of the leaf. In the mixing glass, muddle the tomato in the simple syrup. Add the lime juice, vodka and rum. Shake with ice and double strain into a cocktail glass. Garnish with a Kaffir lime leaf and/or a pear tomato.
*Make your own simple syrup by simmering equal parts sugar and water until sugar dissolves.
