Jam Sanitchat’s Minty Peach Ice Cream

Ingredients

Peaches

1 1/3 lb. peaches
½ c. water
¾ c. sugar
½ c. sour cream
1 c. heavy cream
¼ t. vanilla extract
A few drops of fresh lemon juice
¼ c. mint leaves, finely chopped

Methods/steps

Peel the peaches and cut into chunks. Boil in water over medium-low heat, covered, for 10 minutes.

Remove from the heat, stir in the sugar and cool to room temperature. Combine the peaches and the rest of the ingredients in a food processor or blender. Chill the mixture in the refrigerator and freeze in your ice cream maker according to the manufacturer’s instructions.
