2 bunches kale
3 T. olive oil
1 T. apple cider vinegar
¼ avocado
1 t. salt
1 t. black pepper
1–2 T. spirulina (fresh water blue-green algae)
Hemp seeds
Stem, rinse and dry the kale. Tear the leaves into bite-size pieces and place in a mixing bowl. Add the olive oil, vinegar, avocado, salt and pepper. Slowly massage the ingredients into the kale, squeezing and mixing by hand for 1 to 2 minutes. All leaves should be coated with the mixture. Add the spirulina and massage again, making sure it’s fully incorporated. Let sit for 3 to 5 minutes. Serve sprinkled with hemp seeds and seasonal toppings of choice.
