Lemon Balm Potatoes

1 lb. new potatoes, scrubbed and quartered
¼ c. Lemon-Herb Vinaigrette (click for recipe)
1 t. minced shallot
1 bunch green onions with tops, sliced
½ c. lemon balm and/or lemon basil, loosely chopped
Salt and pepper, to taste

Methods/steps

Bring potatoes to boil in salted water and cook until just tender. Drain and toss with the vinaigrette, shallot, green onions and herbs. Season with salt and pepper to taste.
