Persimmon Martini

Note: If you do not have a juicer, mash fruit together and strain.

4 ripe persimmons
1 lemon
1 ¼-inch piece of fresh ginger, peeled
2 teaspoons (or more) agave nectar
Tito’s Handmade Vodka or Dripping Springs Vodka
1 3-inch piece of vanilla bean, sliced lengthwise, for garnish

Persimmon Martini Directions

Cut the persimmons into quarters. Peel the lemon. Using a juicer, juice the persimmons, lemon flesh and ginger.

For each cocktail, combine 4 ounces of the juice mixture, 1 teaspoon of agave nectar, 1½ ounces of vodka and the vanilla bean in a cocktail shaker with ice. Strain into a chilled martini glass. Garnish with the vanilla bean.
