Spicy Thai Basil Stir Fry

2 garlic cloves
1 shallot (optional)
Pinch of salt
4 Thai chilies
1 T. vegetable oil
6 oz. minced chicken (or
ground pork, beef,
choppedĀ  shrimp, fish fillets
or ground-up fried tofu)
6 oz. green beans, mushrooms or long beans (optional)
1 T. light Thai soy sauce
1 T. dark Thai soy sauce
1 T. fish sauce
Pinch of sugar
Handful of Thai basil
leaves

Methods/steps

Pound garlic, shallot (if using), salt and chilies into a paste with mortar and pestle, or puree in a food processor set to chop (add salt later if using the food processor). Heat a wok or pot over medium-high heat. Add oil and fry the paste for one minute. Add minced meat and continue to stir-fry for one minute.

Add green beans and stir-fry until almost cooked. Add both soy sauces, fish sauce and sugar to taste. Sprinkle in Thai basil. Stir briefly until basil is soft, then remove from heat. Serve over rice.
