Stewed Pork in Peanut Butter Sauce

  • 1 pounds pork, cubed
  • Water to cover
  • 1/2 cups onion
  • 1/2 cups chopped celery
  • 1 tablespoons butter
  • 1/4 cups peanut butter
  • 1/2 teaspoons salt
  • 2 tablespoons brown sugar
  • 1 cups ketchup
  • 1/2 cups water
  • 2 tablespoons apple cider vinegar
  • 1/4 cups lemon juice
  • 3 tablespoons Worshestershire sauce
  • 1/2 tablespoons prepared mustard

Stewed Pork in Peanut Butter Sauce Directions

  1. Cover pork with water and simmer for 30 minutes in a covered skillet or electric skillet set at 325°.
  2. Saute onion and celery in butter in a saucepan until soft and add rest of ingredients. Mix over low heat until combined. 
  3. Combine pork with sauce in covered, ovenproof casserole dish or skillet and cook in moderate (pre-heated 350°) oven for two hours or until very tender.
  4. Serve on rice or noodles.
