The evening will highlight off-menu dishes focusing on four different wild game meats native to South Texas created by Chef “Boomer” Acuna. Each course will be paired with specialty wine from Fowles Wine. The restaurant will have a prix fixe, five-course menu featuring wild game driven dishes. The menu includes Venison Tartar, Confit Rabbit, House-Cured Duck Prosciutto Salad, Wild Boar Osso Bucco and Vanilla Bean Panna Cotta paired with Bergmann Eiswein for dessert. Accompanying bites range from quail egg to pickled mushrooms and more. Each main meat dish is paired with a complimentary wine such as Fowels’ “Are you Game” Chardonnay, Farm To Table Sauvignon Blanc, Farm To Table Shiraz, “Are You Game” Pinot Noir, and Bergmann Eiswein.
