This is a variation on the Tom and Jerry, a classic holiday drink that dates back to the early 19th century. Traditionally made with rum or brandy, this variation also calls for sherry. First, a “batter” is made by beating eggs, sugar and spices. Then the batter is spooned into mugs and topped with spirits and hot water to create a frothy, warming holiday tipple. Ingredients

Cream

  • For the batter:
  • 6 eggs, separated
  • 1 1/2 pounds sugar
  • 1/2 teaspoons allspice
  • 1/2 teaspoons ground cloves
  • 1/2 teaspoons cinnamon
  • 1 pinches five-spice powder
  • 1 ounces aged rum
  • For the cocktail:
  • 1 Dollop of batter
  • 1 ounces sherry
  • 1/2 ounces brandy
  • 3 ounces hot water or hot tea

Tom and Jerez Directions

  1. In a bowl, whisk egg yolks thoroughly, adding sugar while beating. Mix in spices and rum.
  2. In another bowl, beat egg whites until stiff. Fold whites into yolk mixture to combine. Hold in a punch bowl until time of service.
  3. To make the cocktail: Spoon a healthy dollop of the batter into a Tom and Jerry cup or short mug, pour in spirits and top with water or tea.
