2 pounds local tuna, redfish or mahi mahi, cut into fillets

Combine the first 9 ingredients in a bowl or baking dish. Add the fish and marinate for at least 2 hours before cooking.
Grill the fish over hot coals, bake in the oven or sauté in a large pan for a couple minutes on each side. Serve plain in warm, fresh corn or flour tortillas, or topped with a squeeze of lime juice, shredded cheese, diced tomatoes, diced onions or cilantro sprigs.
