Cucumber Salad

Cucumber and dill make a delicious combination, but in Central Texas, their growing seasons barely overlap. Fortunately, dill freezes beautifully and tastes great when used later.

Cucumber Salad


For 8 Person(s)


  • Cucumbers
  • 2 teaspoons white wine vinegar
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoons salt
  • 1 1/2 teaspoons sugar
  • 1 tablespoons Texas olive oil
  • 2 tablespoons chopped dill
  • Lemon thyme, for garnish

Cucumber Salad Directions

  1. Thinly slice the cucumbers with a mandolin or sharp knife.
  2. Whisk the remaining ingredients together.
  3. Toss the cucumbers with the dressing and serve with freshly chopped lemon thyme or other herbs from the garden.
