Black Beans

  • 1 pounds dried black beans
  • 1 small red onion, diced
  • 1 green bell pepper, diced
  • 2 jalapeños, chopped
  • 5 cloves garlic, minced
  • 1 lime, quartered
  • 2 bay leaves
  • 1 tablespoons cumin
  • 1 tablespoons medium chili powder
  • 1 tablespoons dried oregano
  • 1 tablespoons sea salt
  • 1 bunch of cilantro, chopped finely

Black Beans Directions

  1. Soak the beans for at least 8 hours before cooking. Add the beans to a large pot and cover with water. Bring to a boil, then adjust the heat to medium and cook for about 1½ hours.
  2. Add the veggies and garlic to the beans and cook for another 45 minutes on medium-low heat.
  3. Add the lime quarters to the beans along with the spices, salt and cilantro and simmer for at least 30 minutes, or until beans are tender.
