Ruby Dee Philippa's Mo' Rockin' Carrot Spread

Ingredients

Cream

  • 1 pounds carrots, roughly grated
  • 1/2 tablespoons cinnamon
  • 2 cloves garlic, crushed
  • 1/4 tablespoons ground ginger
  • 1/4 teaspoons cayenne
  • 1/4 cups olive oil
  • 1 tablespoons lemon juice
  • 1/2 tablespoons salt, or to taste
  • Pepper to taste

Ruby Dee Philippa's Mo' Rockin' Carrot Spread Directions

  1. Boil the carrots in salted water until soft, about 10 to 15 minutes, then puree in a food processor.
  2. Place the carrots in a bowl with the remaining ingredients and mix well. Check seasonings, adjust to taste and refrigerate. Serve with crackers, or as a sandwich spread.
