Zack’s Sausage Recipe

Ingredients

Cream

  • 2 tablespoons black peppercorn
  • 2 tablespoons pink peppercorn
  • 2 tablespoons cumin seed
  • 2 tablespoons fennel seed
  • 2 tablespoons red chili flake
  • 4 each cardamon pod
  • 3 tablespoons salt
  • 6 tablespoons brown sugar
  • 3 pounds pork shoulder, cubed for grinder
  • 2 pounds beef, cubed for grinder

Zack’s Sausage Recipe Directions

  1. Grind the spices together in spice grinder, and season the meat mixture with spices, sugar and salt before grinding the meat.
  2. Put the meat through a grinder with a medium die and mix together by hand for no more than 1 minute.
  3. Chill the meat for at least 1 hour.
  4. Roll the sausage mixture into 4 oz. patties and sauté at medium high heat, about 2 minutes, until golden brown and delicious.
  5. Flip the patties and put in a 375° oven for 5 minutes to finish. For the more adventurous, case the sausage mixture to grill, smoke or roast.
