Homemade Aioli

Ingredients

Cream

  • 3 medium garlic cloves, peeled
  • 2 egg yolks
  • 1/2 teaspoons salt
  • 1 cups Texas Olive Ranch extra-virgin olive oil
  • 1 tablespoons fresh lemon juice

Homemade Aioli Directions

  1. In a food processor fitted with a metal blade running, drop the garlic cloves through the feeding tube to mince. Stop the machine and scrape down the sides of the bowl.
  2. Add the egg yolks and salt and process until the yolks are thickened and light lemon yellow in color—about 2 to 3 minutes.
  3. Stop the machine and scrape down the sides of the bowl. With the machine running, pour half of the olive oil in a slow, steady stream through the feed tube. With the machine still running, add the lemon juice, processing until blended, and then add the remaining olive oil in a slow, steady stream. Taste for salt and adjust as needed. Refrigerate, covered, until ready to use.
