Goat Cheese and Cilantro Mashed Potatoes

Spring cilantro has a vivid, fresh flavor that adds a note of brightness to any dish. Blended with a delicate goat cheese in mashed potatoes, it provides a delicious variation on ordinary mashed potatoes. Even folks who dislike goat cheese love this flavor-packed addition to the meal.

Goat Cheese and Cilantro Mashed Potatoes

Ingredients

Cream

  • 1 pounds small new potatoes, quartered
  • 2 tablespoons unsalted butter
  • 1 small onion, finely diced (about ½ c.)
  • 4 ounces Wateroak Farms goat cheese
  • 1 tablespoons heaping, minced cilantro
  • 1/4 teaspoons freshly ground black pepper
  • 3/4 teaspoons kosher salt, or to taste

Goat Cheese and Cilantro Mashed Potatoes Directions

  1. Place the potatoes in a heavy 3-quart saucepan. Add cold water to cover. Bring to a rolling boil over medium-high heat and cook for 20 minutes, or until the potatoes are very soft.
  2. While the potatoes are cooking, melt the butter in a heavy 8-inch skillet over medium heat. Add the onions and sauté, stirring often, until wilted and transparent—about 5 minutes. Remove from the heat and set aside.
  3. Drain the potatoes in a colander and transfer to a medium-size bowl. Add the sautéed onions and any residual butter from the skillet, goat cheese, cilantro, salt and pepper. Mash the potatoes with a potato masher, leaving them slightly lumpy. Serve hot.
