Liz Lambert's Chili Puree

  • 2 ancho chiles, stemmed, seeded and coarsely chopped
  • 1 tomato, coarsely chopped
  • 1/2 small yellow onion, coarsely chopped
  • 2 cloves garlic
  • 1 pinches salt
  • 1 teaspoons ground cumin
  • 1 pounds cider vinegar
  • 1 cups chicken stock

Liz Lambert's Chili Puree Directions

  1. Combine all ingredients in a small saucepan and bring to a simmer.  Cook at a low simmer for 2 minutes, then cover, turn off heat and allow chilies to steep for 15 minutes. Transfer to a blender and puree until smooth.
