Jack Gilmore's Everything-We-Need-Right-Here Carnitas

Ingredients

Cream

  • 4 pounds (or more) pork butt, cut into 2-in. chunks, excess fat removed
  • 1 large yellow onion, roughly chopped
  • 1 cups orange juice
  • 1/2 cups pineapple juice
  • 4 (or more) dried ancho chiles
  • 1 bottle of your favorite Mexican beer
  • 1 tablespoons kosher salt
  • 1 tablespoons black pepper
  • 10 garlic cloves

Jack Gilmore's Everything-We-Need-Right-Here Carnitas Directions

  1. Mix all ingredients well in a large mixing bowl.
  2. Transfer to a large Dutch oven, cover and cook on a medium fire (directly on the coals) for approximately 4 hours.
