  • 1 pounds ground chicken
  • 1/2 cups lime juice
  • 2 tablespoons fish sauce
  • 1/2 teaspoons minced fresh ginger
  • 6 shallots, finely chopped
  • 1 cups chopped scallions
  • 1/2 cups chopped cilantro leaves
  • 15 mint leaves
  • 2 tablespoons roasted rice powder
  • Lettuce or endive leaves, for serving

Larb Gai Directions

  1. To make roasted rice powder, dry roast uncooked rice in a small skillet until golden, then pulverize to a fine powder in a spice grinder. (It can also be found in Thai grocery stores and online.)
  2. Sauté the ground chicken, lime juice, fish sauce, ginger and shallots in a large skillet over medium-high heat until the chicken is cooked through.
  3. Toss with the remaining ingredients and serve cool or at room temperature with butter lettuce or endive leaves.
