Heirloom Tomato Jam

This beautifully hued preserve is perfect with a farmhouse Cheddar, atop eggs or with roasted meats.

Special equipment needed: water-bath canner and 5 jars with lids and bands

Heirloom Tomato Jam

Ingredients

Cream

  • 8 (or more) whole cloves
  • 5 (or more) whole allspice
  • 2 sticks good-quality cinnamon, broken up a bit
  • 5 pounds heirloom tomatoes
  • 2 cups light brown sugar
  • 1 tablespoons aged balsamic vinegar
  • 3 tablespoons lemon or lime juice

Heirloom Tomato Jam Directions

  1. Prepare the canner and sterilize jars, lids and bands.
  2. Place the spices in a tea infuser or a small piece of cheesecloth secured with  butcher twine. Place the spices in a pot along with the remaining ingredients and bring to a simmer.  Cook for 60 to 75 minutes, stirring frequently, until thick and jam-like (it will thicken a bit more as it cools, so don’t overdo it).
  3. Ladle into the sterilized jars, tighten fingertip tight and process for 15 minutes in a boiling water bath (start timing after the water begins to boil).
