Quick-Pickled Chow-Chow

Ingredients

For 1 Batch(es)

Cream

  • 1 medium zucchini, diced
  • 1 medium yellow squash, diced
  • 1 small red bell pepper, seeded and diced
  • 1 ear of corn, kernels removed
  • 1 bunch green onions, sliced into thin rings (white part only)
  • 1 cups rice wine vinegar
  • 2 tablespoons sugar

Quick-Pickled Chow-Chow Directions

  1. Combine the vegetables in a large bowl, then pack them into a quart-size jar. Heat the vinegar and sugar until the sugar dissolves, then pour over the vegetables in the jar. Allow to sit for at least 1 hour before serving.
